With proper care, it stays crisp and vibrant for 2+ weeks — far longer than store-bought greens. To store, simply keep the roots attached and cover or contain the head to protect it from the dry air of your fridge. Remove leaves as you eat, and enjoy fresh, living lettuce all week (and beyond).
